ALASKA FORAGER SERIES

Our Alaska Forager Series of chocolate bars integrates locally harvested Alaska ingredients into our chocolate products.  For this bar, we handpicked spruce tips in the Spring here in Ketchikan, which we vacuumed sealed for future use.  We then dehydrated them, made them into a powder, and then refined them with the Philippine Bon Bulak cacao into a 75% dark chocolate.

A sweet chocolate with a citrus and fruit note from the spruce tips.

Cacao Beans, Organic Cane Sugar, Organic Cocoa Butter, spruce tips

*Contains residual amounts of dairy* – We had made our Brown Butter Pecan dark chocolate bar prior to this bar, which uses the same cacao, cocoa butter, and sugar, but what we failed to think about prior to starting this batch in the refiner was the residual amounts of brown butter in the refiner.  The pecans were added to the back of the Brown Butter Pecan bar during the molding process.

BEAN TO BAR

By “bean to bar” we mean that the final chocolate products we sell were transformed by us from unroasted cacao seeds (beans).  We carefully select, sort, roast, crack, winnow, grind, refine, and temper small batches of cacao beans from around the world into craft chocolate to explore the world of unique flavors that await.  Cacao is like coffee in that it is the seed of a fruit with very unique flavor profiles, which can be enhanced or diminished by how it is handled throughout the supply chain and ultimately by the roaster and chocolatier.  Our goal for the chocolate bar is to offer an expression of the cacao that highlights attributes that make it unique and special while at the same time being balanced and approachable.
