FLAVOR PROFILE

In Alaska, alder is one of the most commonly used woods to smoke foods and one we use a lot.  As we thought of ways to incorporate a sense of place into our chocolate bars, we began to think of ways to incorporate the aroma and flavor of alder smoke into a chocolate bar.  Sensory descriptors such as mild, delicate, and sweet are commonly used to describe alder wood smoke and they seem apt descriptors for this bar.  Cocoa nibs were added to the back of this bar for a textural component and counterbalance to this sweeter bar.

BEAN TO BAR

By “bean to bar” we mean that the final chocolate products we sell were transformed by us from unroasted cacao seeds (beans).  We carefully select, sort, roast, crack, winnow, grind, refine, and temper small batches of cacao beans from around the world into craft chocolate to explore the world of unique flavors that await.  Cacao is like coffee in that it is the seed of a fruit with very unique flavor profiles, which can be enhanced or diminished by how it is handled throughout the supply chain and ultimately by the roaster and chocolatier.  Our goal for the chocolate bar is to offer an expression of the cacao that highlights attributes that make it unique and special while at the same time being balanced and approachable.
