FLAVOR PROFILE

We have combined a naturally fruity cacao (Tanzania Kokoa Kamili) with a naturally processed fruity coffee (El Salvador Finca Colomba), to create a fruit forward, but well balanced, 70% dark chocolate coffee bar that is very reminiscent of chocolate covered strawberries.  It is in an interesting and playful spin on a coffee chocolate bar.

While our equipment is cleaned between batches, our bars may contain trace amounts of dairy and tree nuts as the chocolate is manufactured on equipment that also processes dairy and tree nuts.

BEAN TO BAR

By “bean to bar” we mean that the final chocolate products we sell were transformed by us from unroasted cacao seeds (beans).  We carefully select, sort, roast, crack, winnow, grind, refine, and temper small batches of cacao beans from around the world into craft chocolate to explore the world of unique flavors that await.  Cacao is like coffee in that it is the seed of a fruit with very unique flavor profiles, which can be enhanced or diminished by how it is handled throughout the supply chain and ultimately by the roaster and chocolatier.  Our goal for the chocolate bar is to offer an expression of the cacao that highlights attributes that make it unique and special while at the same time being balanced and approachable.
