We only purchased one kilo of this cacao to experiment with and evaluate.  This is our second offering of this cacao.  Our first was a light roast, which was very fudgy with mild fruit notes.  This is a medium roast.  Our goal was to develop some different latent nuances in this cacao.

BEAN TO BAR

By “bean to bar” we mean that the final chocolate products we sell were transformed by us from unroasted cacao seeds (beans).  We carefully select, sort, roast, crack, winnow, grind, refine, and temper small batches of cacao beans from around the world into craft chocolate to explore the world of unique flavors that await.  Cacao is like coffee in that it is the seed of a fruit with very unique flavor profiles, which can be enhanced or diminished by how it is handled throughout the supply chain and ultimately by the roaster and chocolatier.  Our goal for the chocolate bar is to offer an expression of the cacao that highlights attributes that make it unique and special while at the same time being balanced and approachable.
